<img class="alignleft size-full wp-image-1570" title="American Flag" src="http://greasypot.com/wp-content/uploads/2009/05/american_large2.jpg" alt="American Flag" width="50" height="32" />My family came over today for Mother&#8217;s Day and they brought the steaks for the grill and I made the potato salad and two <a href="/2009/05/swedish-rhubarb-strawberry-pie/" target="_self">Swedish fruit pies</a> (a blueberry and a rhubarb).</p>
<p>I have never used a &#8220;recipe&#8221; for my potato salad so this time I wrote down all the amounts of the ingredients so that I could post it here for you.<br />
Swedish potato salad is very different than American potato salad in that it is very plain and uses a combination of mayonnaise and <a href="/category/creme-fraiche/"title="Creme Fraiche" >creme fraiche</a>, no eggs and is very creamy and rather bland&#8230; it&#8217;s good, but I prefer my potato salad <img src='http://www.greasypot.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p><strong>Ingredients</strong>:<br />
Serves 15</p>
<ul>
<li>5 lb. potatoes</li>
<li>1/2 C chopped red onion</li>
<li>1/2 C sweet pickle relish</li>
<li>6 boiled eggs, chopped</li>
<li>1 tsp. black pepper</li>
<li>2 1/2  C Miracle Whip</li>
<li>1 T mustard</li>
<li>salt to taste</li>
</ul>
<p><strong>Do this</strong>:<br />
Boil potatoes and eggs the day before you plan to make your potato salad and cool thoroughly in the refrigerator. Peel potatoes and the boiled eggs. Cut into desired sizes and place in a large bowl. Chop onion and place in bowl with potatoes and eggs. Add all the remaining ingredients and blend with spatula.<br />
Sprinkle top of potato salad with paprika and garnish with parsley. Refrigerate until ready to serve.</p>

It is so easy and soooo delicious! The recipe can be doubled for a large crowd.</p>
<p>I made this for our family in Sweden last summer but was a bit more of a challenge as Sweden does not have canned peach pie filling so we purchased a can of peaches and thickened the juice with corn starch. I have never tasted such sweet juicy strawberries than the ones grown in Sweden. Simply divine!</p>
<p><strong>Ingredients</strong>:<br />
6-8 servings</p>
<ul>
<li>1 can <strong>peach</strong> pie filling</li>
<li>1 quart fresh strawberries</li>
<li>1 banana</li>
<li>20 oz. can pineapple chunks</li>
</ul>
<p><strong>Do this</strong>:<br />
Cut strawberries into quarters, slice bananas, drain the pineapple and add all fruits to the peach pie filling in large bowl. Use a rubber spatula to gently fold the fruits together, chill for 1-2 hours and serve. Doesn&#8217;t get any easier than that <img src='http://www.greasypot.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>

Serves</p>
<ul>
<li>1 apple diced</li>
<li>1 banana sliced</li>
<li>1/2 C red seedless grapes</li>
<li>1 small can pineapple tidbits, drained</li>
</ul>
<p><em><strong>Variation #2</strong></em><br />
<strong>Ingredients:</strong><br />
Serves 5</p>
<ul>
<li>1 apple diced</li>
<li>1/2 C red seedless grapes cut in half lengthwise</li>
<li>1/2 C white seedless grapes cut in half lengthwise</li>
<li>1 small can pineapple tidbits, drained</li>
<li>1/4 C chopped pecans</li>
<li>1 small can mandarin oranges, drained</li>
</ul>
<p><strong>Do this</strong>:<br />
Cut grapes in half lengthwise and put all fruits in a large bowl. Pour the citrus salad dressing on fruits and gently fold with rubber spatula. Refrigerate until ready to serve.</p>
<p><strong>Creamy Citrus Salad Dressing</strong>:</p>
<ul>
<li>zest of 1 orange</li>
<li>juice of 1/2 orange</li>
<li>juice of 1/2 lemon</li>
<li>3 T honey</li>
<li>1/2 C <a href="/?cat=3" target="_self">creme fraiche</a></li>
</ul>
<p>Combine all ingredients in small bowl and blend with fruit.</p>
