New potatoes seem to go so nicely with fish and by sprinkling fresh dill or parsley on the tops of the potatoes makes them really special.  </p>
<p><strong>Ingredients</strong>:<br />
Serves 2</p>
<ul>
<li>2 portions of thawed or fresh flounder</li>
<li>3 T margarine</li>
<li>chopped parsley</li>
<li>flour</li>
<li>Lemon Dill Sauce</li>
</ul>
<p><strong>Lemon Dill Sauce</strong>:</p>
<ul>
<li>1/2 C <a title="Creme Fraiche" href="/category/creme-fraiche/" target="_self">Creme Fraiche</a></li>
<li>1/4 C mayonnaise</li>
<li>1-2 tsp fresh lemon juice</li>
<li>1/4 tsp white pepper</li>
<li>1-2 tsp dried Dill</li>
<li>1/4 tsp garlic powder (unsalted)</li>
</ul>
<p><strong>Do this</strong>:<br />
Combine all ingredients for the sauce in a small bowl using a wire whisk to blend. Refrigerate until ready to use.<br />
Flour both sides of flounder and fry in margarine until both sides are browned on medium-low heat. Sprinkle tops of fish with chopped parsley, salt and pepper to taste. Serve with Lemon Dill Sauce, boiled new potatoes and a salad.</p>

<p><strong>Ingredients</strong>:<br />
4 servings </p>
<ul>
<li>1 lb. frozen cod filet</li>
<li>1 T flour</li>
<li>2 T butter/margarine</li>
<li>1 1/2 T finely chopped parsley</li>
<li>1 T Heinz chili sauce</li>
<li>1 C milk</li>
<li>1/2 C whipping cream</li>
<li>salt and pepper to taste</li>
</ul>
<p><strong>Do this</strong>:<br />
Cut thawed or fresh cod filet into serving size portions. Mix flour, salt &amp; pepper in a plastic zip bag, add the fish and shake gently to coat fish. Melt butter in frying pan on medium heat (do not overheat butter) and place fish nice side down. Fry for a few minutes but do not brown. Turn the fish. Mix the parsley, whipping cream, milk and chili sauce, and pour over fish. While the fish is cooking, spoon some of the sauce over the fish occasionally. Let simmer for 5-7 minutes. Serve with boiled potatoes, carrots and a salad.</p>
